Every Monday at my company, we have a little competition. We guess a specific business metric: like how many new users signed up or how many invoices were created in the last 24 hours. The person closest to the truth gets to choose the cuisine for our Thursday team lunch across all three offices: Melbourne, Cork, and Vancouver.

I have been waiting for my moment to win since October 2025! Back then, I visited Ireland and fell in love with two specific cravings: the Spice Bag and the Chicken Fillet Roll. This week, I finally won, and I knew exactly what I was looking for.

A 12-Inch Taste of Ireland

I found what I was looking for at Foy's Irish Bar & Grill on Kingsway. In Ireland, the Chicken Fillet Roll is a staple you find at the hot counters of Dunnes or Centra. While you cannot customize it here quite as much as you can in Dublin, Foy's version is an absolute unit.

The roll arrived as a massive 12-inch sandwich. I chose the crusty baguette, which was stuffed with crispy, juicy, and tender breaded chicken. It was layered with fresh butter lettuce, creamy mayo, and melted cheese. Back in Ireland, I shared my roll with my husband, but this time? I finished the whole thing myself. It was glorious.

The Secret Weapon: Sour Cream & Onion Crisps

The roll came with a side of crisps (chips) that were seasoned with a powdery, savoury Sour Cream and Onion mix. In Ireland, this is easily the most popular "luxury" flavour, and these were addictive. I could honestly eat a whole bag of just these peppery, flavourful crisps. (I was so excited to eat them that I completely forgot to take a photo!)

My Irish colleague even mentioned that this meal "held its own" compared to back home, which is the ultimate compliment. It was the perfect preview for our upcoming St. Patrick’s Day event: I am already hoping we get a full Irish breakfast delivered next!

Winning the team lunch guess was great, but finding a meal that transported me back to my 2025 Ireland trip was the real prize. Thank God for local gems that bring the world to our doorstep!
