Waking up early on a weekend for a routine dental appointment is never the ideal start to a Saturday, but it does offer the perfect excuse to treat yourself to an incredible brunch afterward. To soften the blow of a 9:00 AM appointment, we decided to check out the recently opened Pallet Coffee Roasters location in Olympic Village.
Situated at the corner of Yukon Street and West 2nd Ave, this beautiful new neighborhood fixture takes over a spot previously occupied by Starbucks. It is always exciting to see a fantastic local roaster breathe fresh life into a classic community corner.
The Perfect Caffeine Fix
Pallet has always delivered on the coffee front, and this visit was no exception. My husband opted for a classic Latte ($6), while I naturally went with my usual order, a hot Mocha ($6.75). Both drinks were served beautifully and were perfectly rich, smooth, and precisely the comforting pick-me-up we needed.

Nordic Salmon Toast vs. The Ultimate Beef Brisket Sandwich
For my main, I ordered the Nordic Salmon Toast ($18). If you have had their classic avocado toast before, the base setup will feel familiar: a hearty slice of toasted bread layered with fresh mixed greens, creamy avocado, and perfectly poached eggs. The addition of the savory cured salmon makes it incredibly satisfying and a solid breakfast choice.

However, my husband’s choice was truly on a completely different level. He went with the Beef Brisket Sandwich ($18), and it was nothing short of perfection. The brisket itself is incredibly soft and tender, layered onto beautifully roasted bread with a few fresh greens.
What really ties everything together is the sauce: a tiny hint of sweet, tangy BBQ sauce that complements the rich beef so perfectly it could easily stand on its own. I don't typically order brisket sandwiches(or much brisket at all, for that matter) but this one completely changed my mind. I am already planning to come back for a dedicated lunch visit just to have it again.

Our Growing Love for Pallet
This trip marks our third time exploring a Pallet location around the city, and they continue to impress. We first fell in love with their brunch menu over at the Kitsilano location, where we devoured their classic avocado toast and spectacular Grand Italian Sandwich. More recently, we had stopped by their Oak Street café to grab some buttery, flaky croissants to go.
Each location has its own distinct vibe, but that high baseline of quality for both food and coffee remains wonderfully consistent. If you are strolling around Olympic Village and looking for a new casual hangout spot, this latest opening is well worth a visit!
