Happy Thursday! In my books, Thursday means one wonderful thing: our company-paid team lunch. Even better? I actually won our team competition this week, which meant I got the ultimate prize of choosing the cuisine. Naturally, I picked Mexican, and we headed straight to our usual beloved spot, Patrón Taco and Cantina.

Since I overate a bit yesterday, I completed a intentional 16-hour overnight fast leading up to lunch. I was so incredibly ready for something nourishing, and their mid-day menu completely delivered. I went for the lunch deal and ordered the Burrito Bowl with Beef Tinga. It turned out to be the absolute perfect, comforting meal to end my fast.

The bowl is beautifully layered and incredibly satisfying, packed with seasoned Mexican rice, hearty black beans, shredded mozzarella cheese, fresh pico de gallo, corn, peas, sweet carrots, cool sour cream, and crisp lettuce, all topped with that wonderfully savory, shredded beef tinga. Every single bite felt both wholesome and indulgent.
