🍗 Spot Spotlight: Pelicana Chicken (Vancouver)

Vibe & Occasion: Casual, upbeat team lunch spot serving solid Korean comforting classics.
The Verdict: A vibrant, balanced, and satisfying meal packed with colourful veggies, tender beef, and savory-spicy gochujang.

Happy Thursday! I had such a dramatic, heart-stopping start to my morning today. I was running late to start the day, so I ran after the bus with my phone tucked into my back pants pocket. Two stops into the ride, I reached down and realized with absolute horror that my phone was completely gone!

I immediately jumped off the bus and started walking all the way back, scanning every inch of the sidewalk, but it was nowhere in sight. My biggest fear in that moment was losing access to all my essential daily apps because of two-factor authentication (2FA). Once I made it back home, I used my husband's phone to ring my number. It started ringing, which meant it was at least still powered on and hopefully hadn't been stolen! I opened up my laptop, used Google Phone Finder to locate it on a map, and triggered the loud ring feature. My husband and I set out on foot toward the location pin, calling the phone continuously as we walked.

Finally, a lovely woman answered! She told me she had found my phone on the road near another person who spotted it, and she kindly kept it safe for me at her workplace nearby. I walked over to her office, picked it up, and breathed the biggest sigh of relief! What a chaotic, dramatic first 45 minutes of the day. Thanks to the God-send angel who returned my phone!

Company Team Lunch at Pelicana Chicken

After that wild morning, I was more than ready for our company-paid team lunch! The theme for today's outing was Korean cuisine, so we gathered the team and headed over to Pelicana Korean Fried Chicken nearby.

Since I've been staying intentional and consistent with tracking my daily health goals, I decided to skip the heavy fried dishes this time and go for their traditional Bibimbap ($17.95).

Pelicana's colorful Bibimbap featuring bulgogi beef, fresh vegetables, and a fried egg over rice.

This bowl was so vibrant and fresh! It came loaded with a colorful array of prepared vegetables (shredded carrots, blanched spinach, bean sprouts, pickled radish, and crisp lettuce) alongside savoury marinated bulgogi beef and a perfectly fried egg sitting on a bed of fluffy white rice. I mixed it all together with gochujang sauce, which tied everything with that signature savory-spicy kick. It was so satisfying, nourishing, and delicious!
