Happy Wednesday! As you know if you have been following along, I went to the Emergency Room at St. Paul's Hospital back in April (see my after-midnight meal at Denny's). That wound unfortunately didn't heal properly, so around June I visited urgent care (and grabbed lunch while waiting at Pane E Formaggio), where they referred me to Access Health Surgery Clinic.
Dr. Andrew is a wound surgeon, and after following his prescription for two months, today was my outpatient surgery to have the cyst removed. Before heading in, I walked around Vancouver General Hospital to work on our VGH campus food guide. Naturally, we also stopped for lunch inside the Gordon and Leslie Diamond Health Care Centre.
📍 Restaurant At-A-Glance: Express Singapore

The main concourse offers four dining choices. Skipping Starbucks left us with Purple Grain Café, C4U Café, and Express Singapore. The Filipino in me was craving a comforting rice meal, so we decided on Express Singapore.
💡 Bubble Waffle Connection: The menu setup looks just like a Bubble Waffle Café. My suspicion was confirmed when our Taiwanese Salty Chicken Nuggets arrived in a branded Bubble Waffle Café paper bag! It appears to operate as a streamlined, express concept under the same umbrella.
Though the menu is smaller than a standard Bubble Waffle Café location, it covers the essentials well. Here is what we ordered:
1. Boneless Hainanese Chicken with Yellow Chicken Rice
The chicken was wonderfully tender, and the red chili sauce served on the side provided a subtle, pleasant heat. A very satisfying comfort meal.

Outstanding. Crisp, piping hot, and seasoned perfectly—the flavour was spot on.

3. Dim Sum: Shanghai Juicy Pork Dumplings (Xiao Long Bao) & Pork & Mushroom Siu Mai
We added these because they looked great in the menu photos, but both fell flat. Given the limited kitchen setup, they tasted as though they were microwaved from frozen.

Despite the dim sum miss, getting a warm, filling rice plate was exactly what I needed to feel nourished and ready for surgery!
