A Seabus Adventure and a Night Market Feast: Exploring The Shipyards in North Vancouver

After nearly nine years in Vancouver, I finally crossed a must-do off my list: riding the Seabus to North Vancouver! The sunny, warm afternoon and the promise of the newly opened Shipyards Night Market made the short journey across the water even more exciting.

Stepping off the Seabus, we were greeted by the vibrant buzz of the opening night market. The historic setting of The Shipyards, with its towering cranes and industrial charm, added a unique flavour to the atmosphere. We strolled around, soaking in the sights, learning about the area's history, and keeping a keen eye out for the diverse food trucks lining the waterfront.

Before diving into the savoury delights, a sweet temptation caught our eye. A pop-up local market housed a stall with baked goodies. We couldn't resist the allure of "Cookies by John," and I snagged a mouthwatering banana bread for a perfect breakfast tomorrow with tea.

A Taco Fiesta with Asian Flair: The Taco Tigre

With our sweet fix satisfied, it was finally time for the main event! The Taco Tigre food truck, with its enticing menu of Asian-inspired tacos, is our choice. We embarked on a full flavour exploration, ordering one of each: Beef Brisket Pho Taco, Lemongrass Chicken Taco, Caramelized Pork Taco, and Korean Kimchi Beef Taco.

Each taco was unique. The slow-cooked beef brisket in the Pho Taco offered a comforting familiarity, while the caramelized pork taco presented a symphony of sweet and savoury notes. Then, there's the slightly spicy and sour Korean kimchi beef taco. However, the clear winner for me was the Lemongrass Chicken Taco. The vibrant citrus flavours of the lemongrass danced perfectly with the tender chicken, creating the best bite.

Our first adventure to The Shipyards Night Market was a resounding success. The Seabus ride offered a scenic start to the afternoon, and the market itself was a treasure trove of sights, sounds, and – most importantly – treats.

So tell me, have you experienced the magic of The Shipyards Night Market? Which food truck is your must-try, and which Taco Tigre flavour would you recommend?
