Cinco de Mayo: Heavy Weight Bowl from Lucha Libre food truck

Sunday mornings are usually a leisurely affair, but this one was filled with excitement as my husband tackled the 8km run of the BMO Vancouver Marathon. While he left our home bright and early, I started my walk towards the finish line shortly after 8:30 am, the energy of the race day buzzing in the air.

As I walked, the question of breakfast loomed large. With the festive spirit of Cinco de Mayo in the air, the sight of food trucks near the finish line was welcome. Faced with the tempting options of Japadog and Lucha Libre Truck, my cravings steered me towards the latter.

Cinco de Mayo called, and the Heavy Weight Bowl from Lucha Libre Truck was my delicious answer. This hearty burrito bowl featured a base of fluffy Mexican rice and creamy black beans, topped with crisp lettuce and a generous portion of mozzarella cheese. The star of the show, however, was my chosen filling: garbanzo bean puree. This flavorful combination of chickpeas, olive oil, garlic, and lime was a delightful twist, further enhanced by the creamy feta cheese and fresh avocado.

While the pico de gallo was a tad frozen, its unique temperature didn't detract from the overall enjoyment. The warm rice, perfectly cooked black beans, and creamy garbanzo filling created a symphony of textures and flavours that satisfied me incredibly.

By the time I finished my delicious bowl, it was the perfect moment to reunite with my husband after his run.
