Mediterranean pizza and vegetarian apps at Boston Pizza

Fridays are usually my work-from-home days, but this week, things were different! Since I needed to be in the office, I called my mom, who, like clockwork, is always in Downtown Vancouver on Fridays.

Keeping in mind that it was a meat-free Friday for us Catholics, we skipped the usual lunch spots and headed straight for a veggie feast at Boston Pizza near BC Place.

I'm a creature of habit, so I couldn't resist indulging in my all-time favourite: the Cactus Cuts. These crispy golden potato slices are a combination of salty and satisfying. The spicy dip always hits the spot.

But the real star of the show was our Spinach and Artichoke Dip. Imagine this: creamy spinach and tender artichoke hearts infused with the aroma of roasted garlic, all held together by gooey mozzarella cheese. A sprinkle of Cajun seasoning added a delightful kick, and the tangy tomatoes, crumbly feta, and sharp Parmesan cheese took the flavour profile to another level. Every scoop is generously piled onto the warm pizza bread.

For the main event, we opted for the vegetarian Mediterranean pizza. The classic Boston Pizza sauce provided a familiar base, while the mozzarella added a creamy touch. Then came the toppings: the earthy taste of mushrooms, the briny bite of olives, the sweet acidity of red onion, and the salty crumble of feta cheese. As if that is not enough, freshly sliced tomatoes and a drizzle of pesto add a burst of summery flavour and vibrant green hues perfect for this cold winter day.

An unexpected surprise work-from-the-office day turned into a delightful lunch date with Mom, filled with flavourful veggie goodness and excellent conversation. Thank God for this opportunity!
